The olives are traditionally harvested by hand from October 20th to November 10th.
They are processed into oil immediately within 12 hours of harvest. Immediately afterwards, the olive oil is filtered and stored in stainless steel tanks under strictly controlled conditions. This preserves its rich taste and excellent organoleptic properties.
The oil is filled under strict criteria into an externally coated glass bottle that protects against light and oxygen. It remains unchanged for a long time until you enjoy it.
It is highly fruity and flavorful while having a balanced, medium-bitter taste.
